THIS ESTABLISHMENT IS CLOSED Not for any ordinary Joe, the popular Joey Bistro atop the Carriage House presents superb cuisine and a dazzling view of the Strip. The mirrored ceiling and dim lighting reflect the romance of a bygone era, framed photos and paintings of renowned Joes (such as DiMaggio, Namath and Montana) adorn the walls. A TV lounge with plush sofas and chairs divides the main dining room from the stylish bar and dance floor. For dinner, Joey bread (a warm, sliced Italian loaf) is presented in a bag, with virgin olive oil and balsamic vinegar for dipping. Italian wedding soup or the tasty house salad precedes chef de cuisine Brett Chumley's savory entrées. Vitello mamma---sautéed veal scaloppini stuffed with thinly sliced prosciutto---is a Joey favorite. The Lotsa Pasta menu has guests creating their own favorites from among six pastas and six sauces for a very moderately priced dinner. We love the oven-roasted pistachio-crusted halibut topped with a light pesto cream sauce. The list of California and Italian wines that includes nine by the glass nicely complements the imaginative fare. For kids 12 and under, the Junior Joey menu offers six entrée choices. The warm chocolate lava cake is among sweet temptations that appeal to all ages. For diners whose name is Joe or Joey, dessert is on the house.
