Juliette Kitchen + Bar Restaurant Review

: The former space of Tradition by Pascal, one of Orange County’s highest rated restaurants, is now home to Juliette Kitchen + Bar from John T. Hughes and Hyun-Sook “Juliette” Chung. The feel is much more casual, with wood floors and tabletops, although executive chef Daniel Hyatt displays sophistication in his delectable bistro cuisine. Start things off with small plates such as the flavorful seared ahi with beet miso purée and spicy pickled cucumber. Each component could be distinguished individually while also combining beautifully on the palate. If you’re visiting for lunch, the Juliette Burger is a must. Served on a brioche bun and topped with aged cheddar, pancetta, tomato jam, caramelized onions and gem lettuce, it’s one of the best burgers we’ve had in a long time. (It can also be found on the “Social Hour” menu served Tues.-Fri. from 2:30 p.m.-6 p.m.) Seasonal inspirations at dinner might range from pork cheeks with charred scallions, pickled shallots and chili-mint gastrique to larger plates like roasted lamb leg tartine. Desserts fall within the realm of Juliette’s daughter, pastry chef Erica Choi. Her creations include a bittersweet chocolate mousse tart with candied kumquats, olive oil ice cream and orange caramel. On weekends, brunch items such as shrimp and grits and eggs Benedict await the morning crowd. There are two dozen wines available by the glass (or in 3 oz. tastes) as well as traditional cocktails with a twist. Bottles of wine purchased from the restaurant’s adjacent wine shop can be enjoyed with a $5 corkage fee.
