Ko Restaurant Review

: The signature restaurant of The Fairmont Kea Lani, Maui, looks to Hawaii’s sugarcane plantation era for its culinary inspiration. Executive chef Tylun Pang sources local ingredients to create dishes based on generations-old family recipes that have been given a modern twist. Among items on the multi-cultural menu is the crispy calamari paired with a ko choo jang aïoli. Design touches continue the theme, with a curved roof evoking a cloud drifting above a sugarcane field, fire elements, and circular seating that accommodates families and groups. Stop by Kō bar for a pre-meal cocktail, or make it a destination to enjoy a selection from the extensive wine list and a happy hour bite.
