For those seeking to extend the scope of their Japanese culinary knowledge beyond the standard crunchy tuna roll and shrimp tempura, Koo, with its imaginative cuisine, will prove to be an educational experience indeed. A minimalist décor with circular tables set against soothing green speckled walls belies the elegant, exploratory fare. Popular rolls are reincarnated, coming back in other forms. Try the angel roll with spicy white fish, crunch and mango topped with white tuna and avocado. Beyond the rolls, an aptly named "Screaming Salmon" with asparagus and a jalapeño spicy sauce will leave diners doing just that while asking for more. Koo's commitment to neo-Japanese food is also evident with delicately rendered appetizers like the lobster summer roll with scallion, bean sprout and mango wrapped with soybean paper that presents a twist on the Vietnamese classic, as well as the fried oyster with a sweet chili sauce that recalls Thai flavors. Entrées cover the spectrum, from steamed or grilled sea bass to steak cooked on a hibachi with vegetables and rice. Desserts are enticing if not traditionally Japanese.
