La Cave Wine & Food Hideaway is a concept created by N9NE Group co-founder Michael Morton. Situated in a corridor offering a respite from the hectic gaming area, the restaurant has design elements that are intended to make you feel like you’re dining in an exclusive wine cellar, including a glass entryway, rich wood panels and oak flooring. Executive chef William DeMarco has conceived a modern American small plates menu that is good for sharing. Must-try dishes are the bacon-wrapped dates with blue cheese fondue and the rich risotto-like mushroom grits. We also recommend the Fontina flatbread with poached quail egg and Canadian bacon, and the halibut rillette on toasted baguette. Special menus are available with gluten-free, vegetarian and vegan selections. A unique dessert offering is the coffee lollipop, a round of ice cream on a stick coated with chocolate-hazelnut crunch. The 250-bottles-strong wine list is encased in a rustic leather-bound menu, and 50 wines are served in an Enomatic dispensing system for two-, four- or six-ounce pours directly from the bottle. An extensive craft beer list with fine brews from around the globe is enhanced by more than a dozen draft handles.
