Lambert's of Taos, owned by chef Zeke Lambert and his wife, Tina, is one of Taos's best-loved restaurants. Known for its fresh seafood and game, it's also the place for a hearty veal chop or pepper-crusted lamb chop. Lambert's has a sure hand with meats, always cooking them carefully to the desired degree of doneness. The tempura-cooked lobster tail with Asian slaw and teriyaki makes an outstanding starter. Though the menu emphasizes meats, vegetarians are always well taken care of. Witness the grilled rutabaga and potato cake, which reminds diners of how flavorful these humble root vegetables can be. The bar has its own separate menu, making it a grand place to grab a bite if you're not looking for a big meal. Both here and in the dining room, service is friendly and solicitous.
