: Co-owner and executive chef Stéphane Roth’s cooking highlights innovative flavor combinations presented in five-course tasting menus. Best is the version featuring the "foie gras symphony" of pan-seared duck liver with plum pudding, whipped meringue, ice cream and black pudding, followed by squab breast and leg with salsify rémoulade, juniper and braised and truffled mac 'n' cheese and a surprise dessert trio.
