Dining room at Le Patriarche, Quebec City, canadaCo-owner and executive chef Stéphane Roth’s menu features flavor combinations prepared in three-ways, such as in the dinnertime starter highlighting foie gras: marbled with hare filets, chocolate ganache with juniper berries and peppers; au torchon; and pan-fried. Main courses may range from a fisherman’s plate (again, a trio of tastes) to the Cornish chicken: roasted supreme, low leg fricassée and smoked drumstick.
