Les Chevaux de Marly Restaurant Review

: After working under renowned game specialist Jacques Cagna for 14 years, Jacques Ruivo has now moved to Les Chevaux de Marly, which is currently undergoing renovation. At this restaurant located just across Marly-le-Roi’s magnificent drinking trough, Ruivo succeeds in his preparation of venison and terrine of foie gras, as well as Antonin Carême’s classic version of lièvre à la royale — hare cooked with red wine, shallots, onion and cinnamon. Even the scallops in a type of curry sauce (crème de Colombo) and loup in an infusion of pepper and white butter are deftly prepared by Ruivo. Some recognizable, as well as inexpensive wines can be found here. The set lunch menu comes at €25; tasting menu at €49,90 and expect to pay around €45 if you order à la carte.
