Les Pyrenees Restaurant Review: The Pyrénées provide the backdrop for this classically decorated restaurant. Philippe Arrambide's cuisine, however, is far from classic. Its base is regional tradition, which he reinterprets according to his inspirations. Thanks to his light and talented hand, the results are most seductive. Excellent regional cheeses are matured in-house. Fine desserts. The superb cellar concentrates on the Southwest, including the best Irouléguys and Jurançons, and Spanish wines (excellent Riojas).
