| Owner-chef Tim Love dons a cowboy hat rather than a toque to prepare gussied-up versions of western and seasonal favorites. Although Love keeps some signature items on the menu, such as the ever-popular garlic-stuffed tenderloin, dishes change daily. Take a walk on the wild side with daring creations like the rabbit-rattlesnake sausage with spicy manchego rösti and crème fraîche. Flounder isn't exactly a Southwestern staple, but when it comes paired with Texas squash and chiles, it takes on a regional flair. Kangaroo, elk and wild boar figure among the exotic wild game featured at this inventive restaurant in the Stockyards National Historic District. A good wine list and assorted rustic artwork round out the experience. |
