Chef Louis Osteen has opened two adjacent restaurants in Las Vegas replicating his Southern low country cuisine. This elegant, 70-seat fine-dining restaurant is enhanced by an outdoor patio overlooking Town Square Park and its lush foliage. Executive chef Carlos Guia, who came to Las Vegas with the Brennan family to preside over the Commander’s Palace kitchen until the restaurant closed, oversees daily operations at Louis’s Las Vegas and Louis's Fish Camp. Begin with the Charleston she crab soup with aged sherry; Louis’s signature crab and lobster cakes with cracked mustard seed cream; or Louis’s chopped salad with lobster. Worthy entrées include grilled scallops with shrimp hash and crispy okra; and pepper-seared tuna with saffron, cannellini beans and winter greens. Chicken-fried duck breast with foie gras dirty rice and kumquat; and extra-aged center-cut New York strip with winter succotash and onion rings are also among winners. Save room for the warm chocolate cake with fried chocolate truffles and the Southern Comfort-spiked peaches and cream beignets. The extensive wine list nicely complements the cuisine.
