Market at One&Only Palmilla was chef Jean-Georges Vongerichten’s first excursion into Latin America, and it has established a reputation as one of the finest restaurants in Los Cabos. Vongerichten combines European and Asian influences with Mexican accents, offering a menu of bright and lively dishes, each seeming to maximize the flavor of its respective ingredients. There’s a certain amount of seasonality, too, dictated by the yield of local farms and One&Only Palmilla’s herb garden, but specialties include fresh yellowfin tuna ribbons with avocado, spicy radish and a ginger marinade; a black truffle and Fontina pizza; roasted cabrilla (sea bass) with an aromatic sauce of organic vegetables; and duck crusted with Jordan almonds in a red wine Amaretto sauce. Osetra caviar is a specialty, so if you’d like a dollop on your sea bass they’d be glad to oblige. Market offers one of the most complete wine lists in Baja. It’s a sleek and sophisticated space with a décor of understated elegance, and service is attentive without being fussy.
