They're calling it Molokai Rim cuisine to emphasize the combination of hearty local favorites and attention to fine ingredients and cooking techniques. Signature dishes in the morning include the mai tai mahi mahi, served with balsamic rum syrup, pineapple chutney and sesame rice; and the eggs Maunaloa served with taro hash. At dinner, try the kalua duck lumpia or the shrimp and scallop brochette. Sunday evenings feature an Asian buffet, while Wednesdays are devoted to pasta with a separate station to custom order.
