Have you been craving Carolina chopped pork? Well, look no further. It’s the highlight at this chophouse, which smokes the pork shoulder for seven hours then spices it with special seasonings and a little vinegar. Like its popular North Carolina namesake, it’s served either as an entrée or a sandwich. But that’s not all that’s in store for you. With a huge smoker on the premises, the restaurant can smoke 70 ribs at a time. Other house specialties include dry-rubbed ribs (rubbed with salt, pepper and spices, then smoked and finally cooked for two hours); and the 14-ounce pork chop (marinated for 24 hours in a secret sauce, then cooked on the grill and served with a choice of homemade sides that can range from sweet potato praline, baked beans, homemade slaw and the like). Try the Blue Ridge potatoes-scalloped with spices and cinnamon. Another mouthwatering touch: The open kitchen allows guests to watch the food being prepared. You won’t have to wait long to relive the experience: All spices and sauces are made on the premises and available for takeout.
