Despite its unseasoned student staff, Nao, the Culinary Institute of America San Antonio’s restaurant, often impresses with its adventuresome blend of Latin cuisines, inflected on a rotating basis by the flavors of the particular country being investigated. Diners have thus far been treated to the cooking of Brazil, Peru, Ecuador and more, all from a multi-course, tasting-style menu --- and if there were some misses among the many hits, there was no shortage of excitement due to the thrill of the new and unfamiliar. And as the school’s Latin program has matured, so have the offerings, passing from relatively familiar Peruvian ceviches to dishes such as Colombia’s sancocho (oxtail soup), Mexico’s cuitlacoche risotto, tuna tartare from Peru, and a Chilean dish with seafood and sausages. Gaucho cuisine of Argentina and an exploration of the Amazon are also on the itinerary. A bar with Latin-accented cocktails --- a drink is created for each new cuisine --- adds to the lively atmosphere already created by exuberant décor and active acoustics. A Farmers Market lunch is offered on Saturdays only, as is a “taco stand” at the market itself.
