About the restaurant: The upscale leanings of neighboring Fairmont Olympic Hotel are mirrored only a bit at Shuckers, where the basement offshoot offers a menu of well-prepared seafood dishes. It's also renowned as an oyster lover's destination. The Victorian-style room, formerly a men’s haberdashery shop, has fans twirling beneath pressed-tin ceilings and features an ornate carved wooden bar stretching across one entire wall.

Food & Drinks: Bivalves come raw, smoked, pan-fried or baked, as in oysters Rockefeller. Oysters also appear in a creamy corn soup, a preferable starter to the lackluster chowders and so-so crab cakes. Other favorites are noted on a daily lineup of fresh fish and seafood, which highlights the day’s catches. For a taste of everything, the mixed grill plate includes halibut, a wild king salmon cake, prosciutto-wrapped prawns, and scallop and Dungeness crab mac ‘n’ cheese. Meat-eaters are accounted for with a grilled beef tenderloin bathed in a red wine demi-glace. For a sweet ending, order the chocolate fudge cake or coconut mud pie. Pacific Northwest and European varietals appear on the extensive wine list.
