The No. 1 ingredient in the sauce is tomatoes, and they’re expertly blended with garlic, onions, molasses and spices for a thick and tangy bite. Pork loin back ribs are wet-cooked until the meat is falling off the bone. This is not like barbecue in Texas, Memphis or the low country; these are ribs suited to the sensibilities of the locals, who in turn bring all of their out-of-town guests to see what the fuss is about. There is an extensive menu for those not interested in ribs, with options that include Gulf shrimp with plum and spicy mustard sauces, as well as blackened salmon.
