The Nightingale is the first solo effort by chef Michael Burgess who, for years, played journeyman in cult eateries and glitzy nightspots alike. But his allegiance to the sort of hearty yet contemporary cooking he learned at Hamersley's Bistro (whose original space his restaurant now occupies) shows. Dishes like roast chicken with green olives or flaky cod atop brandade potatoes pay equal homage to stellar technique and family-style honesty; a real respect for ingredients manifests itself in simple wild mushroom tarts and Meyer lemon custards. The atmosphere likewise inheres in a few key ingredients---striking citrus-green walls and white tablecloths set a designer-farmhouse tone. Except for the sometimes brutally slow service, The Nightingale has all the makings of a mainstay.
