Noble's keeps Italy firmly in focus, though the cooking nonetheless pays homage to the notion of "New Southern Cuisine," all the while sticking with pristine, seasonally fresh primary materials. The restaurant’s executive chef, Jim Noble, combs his sources for ingredients, right down to the Anson Mills grits, smoked Grateful Growers pork tenderloin and straight from Italy extra virgin olive oil. Wood-fired pizzas are made with organic whole-wheat sourdough and topped with gourmet ingredients that blend well, including lamb pancetta and manchego with fennel. The Long Island duck two-ways presents a pan-seared breast and a leg confit balanced by North Carolina sweet potatoes and honey-thyme glazed turnips. For lighter fare, try the halibut with roasted zucchini purée and locally grown patty pan squash. Equal attention is lavished on the first-rate wine list, with a diverse roster of both international and domestic selections in many price ranges. |
