About the restaurant: Due to the transition of Hard Rock Hotel & Casino into Virgin Hotels Las Vegas, Nobu Las Vegas has temporarily taken up residence at Bally's Las Vegas. The restaurant will move back to the evolved property when it reopens, which is slated for fall 2020.

Food & Drinks: Nobuyuki Matsuhisa’s menu remains intact in its interim home, featuring new-style sashimi (whitefish, salmon, shrimp, oyster or scallop marinated in garlic, chives and ginger purée and seared in hot olive oil). Nobu gives a nod to the chef's South American influence throughout the offerings, especially in dishes such as anticuchos alongside kushiyaki. Skewered beef, chicken, vegetable or seafood is presented with flavor profiles that co-mingle both Asian and Latin inspiration. You'll like the tuna tataki with traditional salsa or ponzu. A duo of omakase menus is available: Chef’s Daily Creations and Nobu Signature. The specialty of the house is black cod with miso (a sweet mirin-saké sauce) served in butter lettuce cups. Flourless chocolate cake with white chocolate sauce and green tea ice cream in a bento box, and horchata flan with rice-infused custard, chicha morada, guava tuile and mango passion fruit gelée are among the imaginative desserts.
