Dining room at Noma, Copenhagen, denmarkChef René Redzepi has learned the tricks of the trade from serving in a variety of renowned kitchens around the world (elBulli, The French Laundry, Jardin des Sens). Appointed ambassador for the New Nordic Food program by the Nordic Council of Ministers, Redzepi cooks up regional cuisine using many techniques (pickling, salting, smoking, etc.) in this restored waterside warehouse that's been modernized by interior architect Signe Bindslev Henriksen. Many of the menu's ingredients come from other countries in the Scandinavian region (horse mussels from the Faroe Islands, wild salmon from Iceland, musk ox from Greenland) and are presented in dishes like musk ox served with glazed beet roots, apple and smoked marrow.
