If some of the staff look familiar to those who have worked and dined on Capitol Hill, it’s no wonder: many former employees of the now-defunct La Colline have banded together to open and cook for this McLean destination. The menu sticks to the conventional favorites: crab cakes La Colline, bouillabaisse, and a seafood cassoulet, to name a few---though the kitchen also wants to please meat-eaters with an abbreviated selection of red-meat dishes. Obviously, the kitchen’s intention is to play it safe, for flavors and selections are, by and large, temperate. Yet, some dishes shine: we can recommend the lobster bisque, a hearty blend of heavy cream and lobster essence; the chilled avocado soup seems pallid by comparison. The cassoulet is an unusual mélange with several chunks of seafood, and the crab cakes rate high marks. But, some portions are too skimpy, such as the floating island with barely enough custard to float the meringue topping.
