This sophisticated, hip and high-tech brasserie pulsates with an energetic vibe and affords terrific people-watching, situated as it is in the heart of town near the fountain. Seafood aficionados belly up to the marble bar for fresh oysters and caviar---there’s everything from beluga to American sturgeon on the extensive caviar list, plus a broad selection of chilled vodkas and Champagnes. The inspiring dishes romp across the globe, but we gravitate toward the glazed pork belly sweetened with soy and kissed with watermelon, and the Thai green curry noodle bowl brimming with fresh herbs, shiitake mushrooms and tofu. We also suggest the scallops and foie gras enlivened with Honey Crisp apples, and sides, like the coconut black rice. The behemoth wine list, stamped with coveted bottlings from across the world, rings in on the expensive side, but, so too, does everything in Aspen.
