| The Palace, long the stronghold of New Orleans cooking in Santa Barbara, has broadened its base with pasta and other Italian dishes. What keeps the crowds coming back, though, are the Cajun and Creole specialties: appetizers of thick gumbos and spicy Cajun crayfish popcorn; and main courses such as Creole crayfish crab cakes and straight-outta-the-bayou blackened Louisiana redfish. Also first-rate are Prime dry-aged steaks, such as the juicy 12-ounce New York, which are either grilled or blackened and served with a side of browned garlic butter. Whet your whistle with a Cajun martini and finish your meal with a selection of desserts. A sweet potato pecan pie is served on a bed of Chantilly cream, and the dark chocolate soufflé comes with chocolate bourbon cream sauce. Service is never lacking, as the entire staff is at your disposal, and the convivial atmosphere makes every night seem like a party. |
