Chef Frank Toshi Sugiura, chef-owner of Bar Hayama on Sawtelle Boulevard in West Los Angeles and CEO of the California Sushi Academy, has opened an offshoot in the lounge of InterContinental Hotel Los Angeles Century City. Three of his sushi chefs, all trained by him, rotate during the week to prepare (only) sashimi and sushi made with ultra fresh and top quality fish. Diners can start with seaweed salad or garlic edamame, followed by hamachi (yellowtail), hotate (scallop), tako (octopus) and uni (sea urchin). Spicy tuna, soft shell crab, and salmon skin rolls are just a few of the rolls on offer. And you can always ask the chef to create something special just for you. A selection of Japanese beers and saké is available, as well as cocktails such as the green saketini made with mojito mint, lychee juice and lemon-flavored vodka. To finish on a sweet note, choose an elegant dessert from the restaurant, such as the balsamic cheesecake or the Granny Smith apple tart.
