Part chocolate shop, part pastry shop and part full-service dining room, Payard Pâtisserie & Bistro is the brainchild of French pastry chef François Payard. The centerpiece of his Las Vegas venture is a floor-to-ceiling chocolate clock which displays nine different time zones and dispenses free truffles. The gleaming pastry cases reflect his expertise, as well as that of pastry genius Gregoire Gourreau, who was hired away from Alain Ducasse's Mix in Las Vegas. We like the chocolate raspberry tart, pistachio éclair and apricot almond tart. Sandwiches, cookies, five gelato flavors and made-to-order crêpes are also offered to-go or to take to tables in a park-like area outside the pâtisserie. In the adjoining 46-seat Bistro, designed by the Rockwell Group with rich and vibrant colors, hand-crafted woodwork, crystal, blown glass and leather banquettes, a full-service menu is served for breakfast and lunch. Signature dishes include the classic croque monsieur and croque madame, and chocolate waffles with Nutella and banana. Among main plates, the Black Angus beef burger with green peppercorn sauce, house-made Kettle chips and mixed greens is a winner, as is the white lasagna with ricotta and mascarpone cheeses and a lemon-Parmesan cream sauce. Save room for the Key lime tart with a pistachio and almond nougatine, Key lime curd and Swiss meringue on sugar dough.
