Food stands, butcheries and restaurants populate Honolulu’s Chintatown, but there is no more ubiquitous dish than the Vietnamese beef soup known as pho. Pho Hòa has long held a spot on one of the most colorful streets in the area where workaday folks mingle with the down and out. Locals gather beginning in the morning for a bowl of pho, with its fresh noodles and heartily robust broth, before attempting the morning food shopping or at the conclusion of a morning of hunting and gathering. The soup comes with a wide variety of condiments from fresh bean sprouts and basil and more than one type of hot sauce.
