Tamayo Restaurant Review:

Tamayo, located on historic Larimer Square, is named after famed Mexican artist Rufino Tamayo and is decorated with large mosaic murals inspired by his work. But the real artistry comes from chef de cuisine Arnold Rubio's kitchen. For starters, we like the chile relleno, a roasted poblano pepper stuffed with shrimp, scallops, calamari and Gouda served over a black bean purée. Pork tenderloin marinated in tamarind vinaigrette with a pumpkin seed sauce makes for a pleasant melding of unusual flavors. Meanwhile, a dish with lots of punch for vegetarians is the huitlacoche and wild mushroom enchiladas draped with a fire-roasted poblano chile sauce and rolled with roasted garlic and Mexican ricotta. Tamayo has a nice wine list but an even more impressive selection of 200-plus tequilas. Request a table on the rooftop patio to enjoy a sweeping panorama of the Rocky Mountains with your dinner. Service is brisk but helpful and spot-on suggestions are offered about pairing dishes with the specialty tequila drinks.
