: If barbecue is your thing, this is where to get the authentic article. Every morning at 5 a.m., the dedicated folks at this bare-bones rib joint load only oak hardwood into the smoker. By lunchtime, the meat is ready, tender and juicy. If Texas-style ribs don’t thrill you, choose from barbecued beef, chicken or trout---there’s even Carolina-style pulled pork.
