: If barbecue is your thing, this is where to get the authentic article. Every morning at 5 a.m., the dedicated folks at this bare-bones rib joint load only oak hardwood into the smoker. By lunchtime, the meat is ready, tender and juicy. If Texas-style ribs don’t thrill you, choose from barbecued beef, chicken or trout---there’s even Carolina-style pulled pork. The beef brisket is a standout, tender and lean with a crispy edge. And when the meat’s gone, it’s truly gone, at least until lunchtime the next day. Sides range from the usual potato salad or coleslaw, to a batch of Southern-inspired favorites including collard greens, pinto beans, black-eyed pea salad, and cornbread.
