Executive chef-owner Paul Chhabra introduced Indian food to much of Hampton Roads and consistently delivers quality food and attentive service. Rajput concentrates on its lunch buffet to serve downtown business people efficiently and emphasizes quality over quantity. It includes an ample selection of salads, naan bread and standard Indian preparations such as masala, saag, curry and tandoori. Most of the buffet dishes are mildly seasoned to accommodate the American palate, but things can heat up at night. For starters, we sampled the Rajput Assortment, with chicken tikka, vegetable samosa and various pakoras, all of which were fairly mild but tasty, especially when dipped in the distinctive tamarind sauce. As is often the case with Indian fare, the sauces and chutneys can make the meal, and Rajputs were excellent. For entrées, we liked the seafood masala, a mix of shrimp, fish and scallops, gently cooked in a dark, spicy sauce. The menu also includes plenty of lamb and beef dishes, as well as substantial vegetarian offerings, so good even meat-eaters won't miss the meat. Salads, such as the kachamber salad of cucumber and tomatoes, and the chana chat, a chickpea salad with yogurt and herbs, are a delightfully cool contrast to the warm spices. Desserts are limited, but we liked the mango kulfi, a homemade mango ice cream, and gulab juman, sweet pastry balls in honey syrup.
