Located in the former AJ's Steakhouse space and overlooking the Rehab pool, Rare 120° features a creative menu that suits the Hard Rock's young and hip clientele. Executive chef Jonathan Snyder worked at Prime, the upscale steakhouse at Bellagio, and Strip House at Planet Hollywood, so he's skilled with meat preparations. Creative starters such as Kobe meatball lollipops with three dipping sauces are fun to share with the table, as is the combination of mini portions of grilled cheese, tomato soup and corn bisque. Entrées include Chilean sea bass accented with fresh tomato water and black pepper-encrusted yellowfin tuna with a sweet soy butter sauce. Prime steaks are aged 28 days for Rare 120°, and the best way to experience the best cuts is through the Steak Trio for Two, which features sharing portions of Kobe flatiron, New York strip and filet mignon. Sides include baby baked potatoes, or roasted fingerling potatoes topped with baked potato accoutrement. For dessert, don't miss the selection of mini cupcakes.
