The historic Buick Building's exterior detail blends with a modern interior design featuring suspended neon lights sweeping throughout the space, creating mystery and definition. A vast, ceiling-high wine wall is the restaurant's dramatic focal point. The Prime, dry-aged beef is offered with a unique selection of crusts and rubs (try brown sugar and sea salt or coriander) along with a variety of specialty sauces, so a new flavor combination may be created as often as you wish. Start with RP's Tomatoes, a tower of fried green and hot-house tomatoes with mozzarella; or the beef tenderloin tamales topped with roasted poblano chimichurri and sun-dried tomato cream. A bowl of well-balanced French onion soup might precede your steak, accompanied by its Southern-comfort sides. About those steaks: give the Prime bone-in "cowboy" rib-eye, the 40-day-aged rib-eye and bone-in strips a shot. Or go in another direction with the Southern fried chicken served with house-made pickles. End your meal with a liquid dessert, Ian's Brandy Ice, named for its creator.
