THIS ESTABLISHMENT HAS CHANGED NAMES The Restaurant at Platinum’s fifth-floor location, overlooking the resort’s pool area and the Strip, offers a serene setting for breakfast, lunch and dinner. Chef Brent Hammer’s American cuisine with international touches is inspired by seasonal ingredients that mandate frequent menu changes. Elvis pancakes with peanut butter, bacon, bananas and maple syrup are among imaginative choices to start your day. Among appealing lunch fare are tea-smoked salmon with roasted potato and artichoke salad with fennel, lemon-rosemary vinaigrette and caramelized pear, and the "ridiculous grilled cheese sandwich"---Irish cheddar, Boursin, Emmental, Point Reyes Blue and Havarti topped with pesto and roast tomato. For dinner, full entrées and samplers featuring a variety of smaller portions are offered. Smoked rib-eye salad with grainy mustard and crispy chive gnocchi is a favorite, as is the tiger prawns with mango, micro cilantro and crispy russet potato. Try the Scotch and Sirloin---New York steak with bacon, mushroom, roasted garlic and a flight of four premium single-malts. We like the pan-roasted pistachio- and lemon-crusted chicken breast and the coffee-crusted ahi with smoked lychee. Imaginative sides include asparagus with sherry, brown sugar and smoked almonds. Classic cocktails and an expansive wine list that includes flights complement the fare. Among sweet finales are steamed vanilla-lemon grass pudding with Meyer lemon, lavender and black pepper syrup.
