Rimrock Cafe Restaurant Review: With chef/owner Rolf Gunther and partner Bob Dawson managing this European-style restaurant since 1987, consistency is a given. Add an always-warm welcome and it's easy to see why this cozy café is a longstanding favorite of Whistler's hip, local crowd. Located in The Highland Lodge near Creekside, the place’s intimate tables and an innovative menu starring fresh seafood and wild game beckon year-round. Starters may include Fanny Bay oysters topped with vodka, crème fraîche and caviar or Champagne vinaigrette, seared scallops, and roasted pork belly with ancho chili sauce, pickled shallots and cilantro oil. Main courses range from venison tenderloin pan-fried with foie gras, porcini gnocchi, Cognac and red wine demi-glace, to grilled salmon with lobster mashed potatoes, balsamic reduction and lemon beurre blanc. End the meal with sticky toffee pudding or the tasting plate of five changing miniature desserts. Wine, an integral part of the Rimrock experience, is taken seriously, but there's nothing precious about the ever-changing 300-plus-label wine list or those selecting and serving the wines. Dawson and his crew’s enthusiasm is contagious, and they'll happily guide diners to just the right bottle. In summer, dine on the back patio amid the fresh herbs in Gunther’s garden. Needless to say, service is professional.
