The theme park as restaurant develops one more wrinkle at this architecturally splendid, Caribbean-themed restaurant dominated by a 27-foot wall of flame, a moat and a wall of sugarcane and steel. Also complete with water walls, this is as much a watering hole as a restaurant, with the world's largest rum bar, 85-feet-long and 19-feet-high, making it a hotspot for Las Vegas yuppies and hip tourists. The food is better than you'd expect, especially coconut shrimp with coconut-curry dipping sauce. Columbian coffee-smoked baby-back ribs are lunch options. For the complete rodizio-style dinner (half price for children 12 and under), savory meats, poultry and fish cooked in the authentic churrasco fire pit are sliced from swords onto dinersâ€™ plates, accompanied by an array of sides. Among Ã la carte specialties, the rotisserie-roasted garlic-lime chicken with salsa criolla, sweet coconut rice and pineapple rum-glazed vegetable skewers is a work of art. Imaginative desserts include banana ice (black magic chocolate cake, caramelized bananas, chocolate sorbet, banana and milk-chocolate mousses, and chocolate-Cruzan rum sauce). Food service ends about an hour before the nightclub is open---from 11 p.m. to the wee hours.
