The theme park as restaurant develops one more wrinkle at this architecturally splendid, Caribbean-themed restaurant dominated by a 27-foot wall of flame, a moat and a wall of sugarcane and steel. Also complete with water walls, this is as much a watering hole as a restaurant, with the world's largest rum bar, 85-feet-long and 19-feet-high, making it a hotspot for Las Vegas yuppies and hip tourists. The food is better than you'd expect, especially coconut shrimp with coconut-curry dipping sauce. Columbian coffee-smoked baby-back ribs are lunch options. For the complete rodizio-style dinner (half price for children 12 and under), savory meats, poultry and fish cooked in the authentic churrasco fire pit are sliced from swords onto diners’ plates, accompanied by an array of sides. Among à la carte specialties, the rotisserie-roasted garlic-lime chicken with salsa criolla, sweet coconut rice and pineapple rum-glazed vegetable skewers is a work of art. Imaginative desserts include banana ice (black magic chocolate cake, caramelized bananas, chocolate sorbet, banana and milk-chocolate mousses, and chocolate-Cruzan rum sauce). Food service ends about an hour before the nightclub is open---from 11 p.m. to the wee hours.
