The Japanese term shabu shabu supposedly imitates the sound Japanese ears hear when chopsticks swirl through a pot of simmering broth, a sound heard through the evening at this specialist in traditional Japanese cuisine. In addition to shabu shabu dishes based on prime beef, chicken or seafood (all accompanied by vegetables, several delicious sauces and bowls of sticky rice), the menu offers imaginative appetizers and a variety of cooked-at-the-table entrées. The servers are swift, deferential and pleasant, and the crowd speaks in murmurs, the better, perhaps, to hear the chopsticks utter shabu shabu as they fish for slices of poached-in-seconds beef.
