: Shimizu Sushi & Sochu Bar, located in the boutique Washington Jefferson Hotel, offers a quaint feel reminiscent of similar establishments in Tokyo. Guests can choose to dine at one of the few tables, watch the action at the sushi bar, or belly up to the shochu bar, which features more than two dozen labels of this Japanese beverage made from distilled rice, barley, potato or sugarcane. Start with a salad composed of four varieties of seaweed or an appetizer of steamed watercress or fried soft shell crab with seven-spice sauce. Chef-owner Hisao Shimizu has been making sushi for more than 20 years; select one of the sushi or sashimi platters for variety or order à la carte. A selection of hand and cut rolls is served, including standards like the rainbow roll, as well as Japanese dishes such as grilled black cod with soy sauce. During lunchtime, combination boxes of teriyaki, tempura and Japanese curry are available.
