Shiva’s Indian Restaurant & Bar Restaurant Review: Professional waitstaff at this northern Indian restaurant attend tables in a dining room done in relaxed tones of saffron and rusty red, with a high domed ceiling painted to look like the sky. The tool of choice in the kitchen is a heavy iron pan called a kadai that produces uniform heat, and dishes are composed using extra-virgin olive oil and very little butter or cream. The signature entrée elevates the eggplant to a place of much deserved worship --- delicate, stewed, round baby eggplants in a sweet-and-sour tomato sauce spiced with cumin, garam masala and coriander. Butter chicken starts off in the tandoor and then is shredded and simmered in tomato-based honey gravy. Shiva’s offers a wide array of vegetarian options, as well as some dishes geared more toward American taste buds, such as lobster and rack of lamb. The wine list offers some good bargains by the glass and the bottle. The daily lunch buffet is more expansive on weekends. Early diners receive 10 percent off the bill from 5:30 p.m.-6:30 p.m. Sunday through Thursday.
