| Miles away from any stretch of ocean, sushi in the desert is a perplexing concept---but Shohko Café is a seaworthy restaurant. The fish, offset by rice and pretty garnishes, is beautifully fresh. And while the dining room is white and minimalist, the food is anything but. Sushi lovers are well-advised to order any sushi, sashimi or hand roll on the menu and mix and match to their heart's content. Try the white tuna toro sushi, which packs a tiny punch of wasabi between a thick, tender layer of tuna and a handsome mass of sushi rice. There’s also plenty to eat here for those who don't roll with raw fish: the unique Santa Fe roll, assembled with green chile and shrimp tempura, for example. This restaurant is the de facto place for après-relaxation: whether you're topping off a visit to Santa Fe’s Ten Thousand Waves spa or a long day of leisurely hiking, Shohko satisfies. |
