| All of the area’s Silver Diners have turned the page and entered the twenty-first century with panache: executive chef Ype Von Hengst has crafted a menu that is both enticing and healthful, based on local, sustainable ingredients. One meal here will convince even the most skeptical that this isn’t granny’s diner. Imagine offering sturdy whole-wheat toast, certified Angus beef, buffalo sliders, a pomegranate yogurt shake (yes, you will still find the old-fashioned super thick shakes but made with all-natural ice cream), Amish farm eggs, and brown rice and edamame as sides.
