THIS ESTABLISHMENT IS CLOSED Located in Canton's upscale lifestyle center, The Shoppes at Farmington Valley, Simmer is not your typical mall restaurant. In fact, it has all the flair you'd expect to find in a downtown eatery. While we find its ungrammatical motto---Familiar Food Different---a bit off-putting, we are impressed by the kitchen's adherence to it, approaching the comfortable in creative ways. Black pepper-honey aïoli and baby tomatoes add sweetness to buttery fried calamari; the use of Fontina in a pulled-pork quesadilla with house-made barbecue sauce and chili oil is unexpected yet smart. Salmon, crusted with artichoke and sauced with Sambuca-spiked butter, is all elegance without pretension, as is skillet-roasted trout with pancetta crackers and olive tapenade. Four flickering gas fireplaces enhance the aura of hominess-plus.
