 With its high-style setting and menu that could best be described as experimental at times, Stage has found a following under chef Ron de Guzman, who streamlined the menu without losing upscale flair and flavor. Chef de Guzman follows the trend towards using as many local ingredients as possible, including Kona lobster and fresh island produce. The menu changes frequently, but look for signature dishes such as ahi carpaccio with chili pepper "pearls" and mini rice crackers or the Kona lobster salad with Kahuku corn relish and Okinawan sweet potatoes in addition to what might be featured during your visit. Desserts will not disappoint. Options might include the lilikoi creamsicle with extra virgin olive oil shortbread crust and strawberry-guava balsamic gastrique.
