Inspired by the boulangeries and open-air markets of France, Alison Pray and her husband, Matt James, opened Standard Baking Co. in 1995. This Portland bakery offers French baguettes, brioche, rosemary focaccia and other breads, along with croissants, pain au chocolat, scones and more. Warm cookies come out of the oven at 1:30 p.m. every day, so plan accordingly.
