The high heat of a 750-degree volcanic rock sears the outside of the meat, keeping in the natural juices, so there's no need for added oils or fats. It's an idea that works: New York steak is tender and flavorful, and needs nothing more than a little salt and pepper. Seafood, pork, veal and lamb are also available; and for those uninterested in doing the work themselves, there are a few prepared pastas and sandwiches. The place itself is sleek and contemporary, with water fountains, mosaic tile work and a dim upstairs loft area.
