The focus is on raw and marinated dishes, which allows the Tokyo-trained chefs to devote their full attention to creating fresh and eclectic preparations like vegetable hand rolls of radish sprout or burdock. If it’s available, try the salmon roe over grated Japanese white radish or the yellowtail with scallion and wasabi. Given the emphasis on quality, you’d probably never guess that Sushisay is part of a 38-restaurant Tokyo chain.
