Technique Restaurant Restaurant Review: THIS RESTAURANT IS TEMPORARILY CLOSED FOR RENOVATION The spacious Technique Restaurant, the eatery of Summerlin’s Le Cordon Bleu College of Culinary Arts, complete with a bar and lounge, offers lunch and dinner to the public Tuesdays through Fridays. The students take turns preparing the fare in the gleaming exhibition kitchen and serving it, too. A typical dinner menu includes “first plates” such as fresh mozzarella atop tomato fondue or lobster endive salad. Move on to roasted chicken, dumplings and Brussels sprouts or filet mignon with béarnaise sauce and potato purée. Items such as a turkey tartine or miso salmon may be offered as lunch fare. Apple pie and a trio of profiteroles are among sweet finales.
