Nelson's organically inclined menu, built around seasonal and local ingredients, draws from global influences, with an emphasis on Southwestern, classical Mediterranean and exotic Asian cultures. Start with tomato and artichoke soup or the hot-and-sour beef bowl brimming with shiitake mushrooms, rice sticks, bean sprouts and lime. Main dishes, like the cornmeal-crusted Rocky Mountain trout and green-curried Colorado stir-fry aromatic with mint and basil, showcase Nelson's culturally diverse talents in the kitchen.
