Most of the farm-fresh ingredients at Thomas Hill Organics actually come from the owners’ nearby farm, and many of the proteins are locally raised as well. Obviously, then, seasonality is key for executive chef Julie Simon, a native of France who counters her youth with impressive creativity in the kitchen. The menu leans towards a rustic French bistro approach, but Simon often brings Asian and Latin flavors to the table as well. Dishes have included a summery heirloom tomato and cucumber gazpacho, a beef and chorizo meatloaf sandwich, earthy braised rabbit with lentils, a crispy thin-crust pizza sprinkled with house-made fennel sausage and smoked shiitakes, and a velvety cheesecake made with fresh ricotta and preserved kumquats. Local wines are also celebrated here, with a good by-the-glass list and even some half-glass options as well. The sought after tables are outside on the Euro-style patio, but there is some limited indoor seating as well for rainy days or special events.
