Forget soul food. The real roots of Southern, Caribbean, and even South American cooking lie in the continent of Africa---and the more sophisticated cuisines of its Western countries. And Providence can lay claim to having one of the better outlets for tasting this in our country, a tiny Liberian home cooking place called Tunu's. Influences from Morocco to Persia are at play here and ingredients such as peanut butter, collard greens, dried fish, okra, and yams are all in evidence. First generation immigrant Tunu Moore is the matriarch, having opened her place at the urging of friends, and keeps the menu small (six to seven entrées per day) on purpose. Try the ginger drink for washing the spicier things down.
