| A Champagne lounge, wine flights, hand-crafted cocktails, and high-quality cuisine put Twisted Cork in a totally different class of wine bars. Located in the beautifully refurbished Hyatt Regency Bellevue doesn't mean this is a typical "hotel bar" either. With dozens of flights, 50 wines by the glass, and a wine library offering more than 300 bottles, guests can't help but be delighted by their choices---most notable being the Champagne flight blending three French selections: 1998 Dom Perignon Brut (Epernay), 1996 Veuve Clicquot "La Grande Dame," and 1995 Krug Vintage Brut. Serious food is available next door at Dan Thiessen's 0/8 Seafood Grill, but Twisted Cork patrons can also choose from several tasty options. Seafood fans should try the seared calamari served with lemon grass, ginger and cashews. Landlubbers will enjoy exotic tea-smoked duck breast served with a chive pancake, currant marmalade and frisée salad. Cold fare includes Hood Canal oysters on the half shell in raspberry-black pepper ice, and raw sashimi-style scallops with sushi fixings (soy-miso vinaigrette, wasabi aïoli, pickled ginger). |
